Extra sharp chedder is my absolute favorite. I love bleu cheese, too, and goat is great as well! Too many to choose from. Does anyone else like baked brie cheese? Extra sarp cheddar or habenero jack. Baked brie is alright, I prefer it non baked on crackers. Or cream cheese and smoked salmon on crackers. Or home made mac'n'cheese.... I love limburger, stilton, really aged brie where it's almost liquid...pretty much all the cheeses that no one else likes. I also LOVE buffalo mozzerella. So good in a caprese salad.
