Post Vegetarian Scotch Eggs
I made these for Matt last night and he told me he thinks they may just be his favorite food, so I figure I should share the recipe. :)

What you will need:
4 Peeled, Hard Boiled Eggs, blotted dry with a paper towel
1 Raw egg, beaten in a bowl
1 cup flour, in it's own bowl
1 cup seasoned breadcrumbs, in yet another bowl
1 pkg veggie "sausage" (Gimme Lean works awesome for this recipe)

How to make it:
Separate the "sausage" out into 4 portions and flatten into 1/4" patties. Wrap each patty around a single egg making sure the egg is completely encased. Roll in the flour, then the egg, then the breadcrumbs. Place on greased cookie sheet in 350 degree oven for 25 minutes. Serve hot.

I like to make Hollandaise sauce to pour over these, but they are just as good with plain old ketchup or on their own.

Sounds yummy. I will give the recipe a try tonight. Do you have any good no-carb recipes? I have about exhausted all the good ones that I could find on google.

Wow! I am really glad you dredged this up! I haven't made these in quite some time (like since I got pregnant). I think I'll have to make them this weekend as well. Sounds like I know what's for Brunch on Sunday!

Oh, and for your info, don't buy the veggie sausages - try to get the "ground sausage" equivalent if you can. Makes it much easier to mold to your eggs. ;)

Humm.. I've never seen ground sausage, just ground round. I will have to look, hehe.
